Toast some walnuts in a hot pan. It only takes a few minutes. Be careful not to burn them; stir the nuts or shake the pan every minute until you smell the nut oil aromas, then take the pan off the heat.
Top a bed of spinach with sliced cucumber and grape tomatoes. Add the cooled nuts to the top of the salad.
Add some goat cheese crumbles to the top, if desired.
Drizzle with Apple Cider Vinaigrette.
Menu Suggestion: Saute Mahi Mahi. Serve with Spinach Walnut Salad and Guacamole. Drizzle everything with Apple Cider Vinaigrette. Enjoy with a local Chardonnay.
